Dessert out of Peanut butter, Chickpea flour and Bananas!

So  today I made a little snack for me and my Mom out of peanut butter, ripe bananas, coconut oil and chickpea flour.  Topping in off with a little sugar free dark chocolate.  It was a Sunday afternoon where I thought to try something different. 

2 cups of Chickpea flour
1 cup of Coconut Oil
1 teaspoon of baking soda
2 eggs
1 cup of peanut butter
4 ripe bananas
1 teaspoon of Cinnamon
2 cups of semi sweet or sugar free dark chocolate

What I did was mix all these ingredients together to make the dough and press it into a 9"x 13" baking dish.  Baked for 30 minutes let it cool down for 5 minutes and cut into rectangle shapes.  I ended up with 24 bars but it depends on what size you choose.  Then I dipped the bottoms of the bars into melted dark chocolate and drizzled a little on top and placed them in silicone molds.  For  me it makes things much easier for clean up.  Placed them in the freezer for about 10 minutes pop them out and served them to my Mom.  Pretty, easy and simple all in one.  Taste very good.  I think the name of this creation should be called Peanut Butter Chickpea Flour Short Bread Cookies.  Maybe I should think more on the name.  But I like the way they turned out.
